Why does fresh rosemary taste dry? I don’t mean it tastes like dried rosemary, but i don’t know how else to describe how it makes my tongue feel. Why is it like that?
Astringent is the word for that.
Because it contains tannins. Tannins produce that “dry mouth” feeling.
It’s the same stuff you’ll find in dry wines.
It’s the acids and related compounds. Basically, the various components are similar to those in dry wines, teas, and even weed. It’s a mishmash of terpenes as well.
But they all have some degree of that astringent effect.
Tannic acid is a big one for that.
Why? No clue…why does anything taste the way it does.
You’re probably noticing the woody earthy flavors of it more then anything else. I suspect you use too much rosemary as well. It shouldn’t even be the main flavor and should only amplify other flavors, not be the main flavor.
I actually hate Rosemary. Takes like pine cleaner to me.
Ah, see, that’s why I like it. It’s like Christmas in my mouth.
