I love my nuc and use it for the following:

1. Plex server
2. Chia farmer with open external HDD space - helps supplement cost of electricity
3. Emulator (have it hooked up to my basement tv) play old school game with kiddo.
4. Old video game server. I host a server on an old game I played a bit when I was younger.
5. Network drives for family files

How powerful are these?

Server or retro games emulator or kodi or idk

I have a similar unit, NUC6. I use it as kitchen computer displaying slideshows of photos of my family.

Try installing Windows 7 on it, yes there is a way to install with UEFI and USB 3 + NVME
