The other main way of synthetically making Vanillin is from Lignin which is way more sustainable and a byproduct of the paper production. I’ve also recently read that it can be made out of literal shit. Apparently they got a Nobel price for that in 2006/07 It can really be made from a lot of things since it’s a realativly simple compound.
