First time I’ve cooked a skirt steak myself, and I’m really happy with how it turned out. Can’t beat that sear you get with cast iron!

    Yeah, made the chimichuri too…and of course we added extra garlic, that’s required. It was a little “hot” by itself, but on the steak, it balanced beautifully.
