If you have access to litmus paper you can do a fun experiment- test your saliva PH, then think about biting into a lemon and test again. It will go from roughly neutral to very basic in preparation for the incoming acid.
I like lemons a lot (we have a huge tree), but don’t think I’d eat one like that. But looking at the picture really makes my mouth water because my brain knows how sour biting into that would be.
There are actually some lemon varieties with a thinner grind that are meant to be peeled; cant say what the name of a specific species though; also depending on where you live limes with a tinner grind may be easier to find.
