I just throw a big old scoop of (also solid) PB into a bowl and mix in enough soy sauce to let it dissolve a bit, and as much sambal oelek as I think I can handle. The veggies are boiled with the noodles, then I strain and mix the sauce in with the noodles. A little bit of water remains on the noodles and helps make it nice and creamy.
There are many variations of this you can do! I sometimes add black vinegar/rice wine vinegar, or use tahini. It’s whatever combo of fat + salt + spice your little heart desires 💖
