I remember reading something about this being a thing in the south like 100 or so years ago.
Louisiana in the 1990s and it’s still a thing.
I haven’t heard anyone here tell us to eat rats. Maybe this is a central CA thing.

Some encysted parasites are resistant to heat but there is a temperature that if maintained for the correct amount of time will make it safe to eat. Other methods to help with food safety include salt curing, freezing, or microwave radiation but you will always still have to thoroughly cook the meat.
