How hot does your oven get? Usually you want to have higher hydration (70% minimum) if your bake at around 500 F. The lower the temperature, the longer the cooking time, the higher the hydration.
My oven goes up to 250c (about 500f I think) But the way I cook it is the pizza goes on the stove top on the highest temp first that way the bottom is cooked and crispy and the border puffs up. Then I put it in the oven with just the grill on to the max and cook the top for a couple of minutes
