Made these vegan muffins, including equally shitty diy muffin liners, in my airfryer because I don’t have an oven. Made with leftover peanut butter and blueberry jam before leaving the house for a few weeks 👌🧑‍🍳

Honestly, the taste and texture was good. Baking in an airfryer is quite quick (fast to preheat) and putting a bit of water in the bottom steams them a bit, which keeps them moist. Only problem is having to make multiple batches because of the small size. *edit: I used the ninja foodie xl, which is a pressure cooker/air fryer/cooking thing. It might come out dry in a regular one

Thank god they ended up looking like this! These are very appetizing. The grey goo was uhhhhh not, to put it delicately 😅 how did you figure out how long and at what temperature to air fry these? Trial and error? A recipe? I’ve never considered air fryer baking

I’ve never thought to make PB&J muffins. Huh.

It might’ve worked better as a scone, because those can hold their shape a bit better than wetter muffin batter. Though it’d need less moisture for that. I suppose you could make them purely peanut butter scones and added the blueberry jam once they’re done.
