Something like https://sonoff.tech/product/gateway-and-sensors/snzb-2d/ but I want the displayed values to be that of an external sensor.

Preferably the indoor display should be wireless using zigbee. External sensor will be zigbee.

Anyone have any suggestions?

An old/cheap tablet/smartphone as a display and one of these sensors…
