Probably because they want to run Cosmic as a desktop environment, so will see when it’s out.
I personally use Pop!_OS because it ship with the nVidia driver already backed in, sell hardware (so they don’t just “make” a distro but provide hardware to run it on) and because I already knew Ubuntu, which is what Pop!_OS is based on.
But virtually, the majority of distro will work just fine for that, with more or less work.
You even have gaming oriented distro like Draugr or Garuda.
For the LAN, faster local transfer if you use huge file or if you have a lot of computers accessing your server.
It’s also useful if you live in Europe since a lot of country has 10Gbps as long as you have access to fiber since half a decade now (the krone world wide being Switzerland with a 25Gbps home offer on dedicated fiber).
In your case, router will be the bottleneck so not worth as long as the router isn’t upgraded, you’re always tied to the slowest part.
