I dunno about the Sentry mode stuff, but I’m aware that the ‘Cabin overheat protection’ works only for up to 12 hours after you leave the car.
So, if you left it for a week, it wouldn’t be blowing your air conditioner to keep it cool on day 4.
You can remotely unlock, then lock the car to reset this timer.
