Edit: did not try to make exactly this because I only had three potatoes.
That being said, some steamed and buttered green beans, those potatoes cut into thick slices then baked until tender, with a poached egg got kinda close.
Did not make a good sandwich. Would want to do a twice baked skin for that; the slices just fell apart trying to pick it up.
Ate with a fork instead. Was fucking awesome.
Would recommend making sure the green beans are very tender rather than just fork tender because the little bit of crunch and squeak didn’t fit (imo)
All the butter can be used, and it just gets better. Butter all the things, then add more butter.
Will be trying a sandwich next time I get a big bag of taters to work with.
