The yogurt I made from soybeans, I soak them over night then run them through a device I have called the SoyaJoy which blends/cooks it into soy milk, i then put it in my instant pot with a yogurt button and add vegan yogurt starter or left over yogurt to it and let it do its thing for like 8 hours. When its done I usually need to blend it because it gets pretty thick. For crema I add some extra soy milk I reserved back to it, add nooch and lime juice and blend it a bit more.

I didn’t realize that it was actually yogurt yogurt made from soy. Somehow, despite how obviously feasible it should be, it never struck me as possible. That’s fascinating. Thank you so much for the rundown!!
