It’s a pun, Seitan is an east Asian ingredient often used as a meat alternative. It’s made by taking a flour and water dough and rinsing it until all the excess flour/starch is gone, leaving just the gluten behind. It’s often roasted or fried like meat. https://en.m.wikipedia.org/wiki/Seitan
