Sauce 1 Tbsp cornstarch 2/3 cup beef broth 3tbsp oyster sauce 1 Tbsp sesame oil 1 tsp chili garlic paste(or more)
Stir fry 1 tablespoon soy sauce 1 Tbsp dry sherry(I used a red wine) 1 Tbsp brown sugar 8 ounces of strip steak (I had stew meat) 1 medium head of broccoli 2 tablespoon oil 1 medium onion Garlic
For the sauce mix 2 tablespoons of broth and cornstarch the. Set aside. In a bow mix all other sauce ingredients.
Mix the soy sauce sherry and brown sugar then add the beef and combine.
Boil broccoli in salted water for 2 minutes then drain and add to an ice bath.
On high add half the oil to a wok and once smoking add the beef then stir constantly until brown. Remove meat and set aside.
Add rest of oil, soften the onions then add garlic til fragrant. Afterwards add all ingredients but the corn starch slurry. After returning to a boil drizzle the slutty and cook til thickened.

Instead of sherry or red wine, order some shaoxing if you like doing stir fries. It really make a great difference.

I’m a white guy. It makes it taste so more “Chinese”. I’ve just got into stir fry myself. There is a newish cook book by that momofuku dude that has served me well. I wish you best in your stir fry journey.
